I didn’t realize how much I loved vegetables until now. I’ve always been a fan but to be honest even though I basically grew up vegetarian, as an adult I didn’t really incorporate veggies in my cooking diet as much as I wanted to. Being home in Boston for a little before heading to London kind of helped spark this. My mom always just throws a bunch of veggies together and makes up dishes and they are always so good. While I’m only cooking for one right now, I figured it would be a good time to experiment with a bunch of veggie dishes.
This receipe came out so good! Well obviously or else I wouldn’t be sharing it.
Ingredients:
Shrimp
Yellow bell pepper
Asparagus
Red Onion
Carrots
Tomatoes
Lime
Olive Oil
Mixed Greens
Spices:
Oregano
Salt
Pepper
Chilli Powder
First thing you’re going to do it dice up all your veggies and place them on a backing pan. Season them with olive oil, oregano, salt, pepper, and chili powder. Heat the oven to 425F and bake for 15 minutes.
Next you want to season the shrimp with olive oil, oregano, salt, pepper and chilli powder. Squeeze lime juice on top and put in the oven at 425F for 5-7 minutes.
Next you want to make the dressing while that’s cooking. I’m old school Caribbean and we don’t measure so I always cook to taste (unless its baking cause you cant “gestimate” there) For the homemade dressing I used: olive oil, honey, salt, pepper, chilli powder, lime juice (fresh from a lime). Then mix it all up.
Once everything is cooked, add mixed greens to the bottom of your plate, place your roasted veggies and shrimp on top then top it off with the homemade dressing.
