• GLUTEN FREE STRAWBERRY SHORTCAKE

    Ingredients:

    Fresh Strawberries

    Almond Milk

    Pamela’s Gluten Free Biscuit & Scone Mix

    Organic Erythritol (can substitute sugar or maple syrup instead)

    Butter (can use vegan butter to make it a vegan recipe)

    So Delicious Coco Whip Cream

    I headed to Tosha’s house to learn this is a super easy strawberry shortcake recipe and not only is is gluten free and sugar free (with a vegan option) but it is SOOO good. So many people think you can’t modify recipes without sacrificing the taste but if you now how to do it you can make some delicious recipes!

    Now just because it’s gluten free or even vegan does not make it healthy. I would say it s healthier option but don’t go eating sweets everyday just cause it’s gluten free! Just a little PSA.

    Now lets get into this recipe:

    First you take your strawberries and dice them up into four’s. Place them in a bowl and add the Organic Erythritol if you want it sugar free or add sugar or maple syrup. No matter what sugar you choose you add it to taste, I don’t like my sweets too sugary so when I re-made these at home I only added about 1/2 teaspoon of maple syrup. If you get ripe strawberries, they will already be sweet so you don’t have to go overboard. Then you just mash up the strawberries letting out some of the juices and mixing in your sugar. Don’t mush them, you still want them to be chunky. Then place them in the fridge to chill.

    After you prep your strawberries you want to make your biscuits. So these aren’t from scratch but the Pamela’s Gluten Free Biscuit & Scone Mix is so good you will think they are! Follow the directions on the packet making sure not to melt the butter (see video). You want the butter to be little balls in the dough. All you need for the mix is almond milk and butter! It’s super easy to make and as we mentioned you can make it vegan by using a vegan butter.

    We had to bake these for about 30 minutes on 350 degrees in the oven but use your discretion on the time. 25-30 minutes should give you the perfect biscuits. We baked ours in a cast iron skillet.

    Last step is to put everything together! Grab your strawberries out of the fridge and your whipped cream, we used So Delicious Coco Whipped cream. Add your biscuits to a bowl pouring your strawberries on top and lastly a dollop of whipped cream!

    And that’s it! When I tell you this recipe is so good you won’t even think twice that it’s gluten free! Try it for yourself and thank me later!
